New Recipe

Chicken and Black Bean Chili

Ingredients:
1 to 1 1/2 lb chicken tenderloins, cut in 1/2" pieces
1 cup chopped onion
1 can beans - pinto, white, or small red, drained (15 ounces)
1 can black beans, drained (15 ounces)
1 can stewed tomatoes, Mexican style, (15 ounces)
2 tablespoons chili powder or seasoning mix

Preparation:
In large skillet sprayed with nonstick cooking spray, brown chicken and onion over medium heat. Stir in remaining ingredients; bring to a boil. Reduce to low; simmer for about 20 minutes.Serves 6.

I got this recipe from About.com and it was pretty good. I enjoyed it, but if you are a chili fanatic like my huband, it may not be for you. It is actually more like a stew than a chili. But hey, if it's cold outside, any type of warm soup works for me!

So, tonight I am doing my Couch to 5k Day three. I am looking forward to it. I got on the scale this morning and wasn't happy about what I saw. However, my husband is now out of the 200's! I know I should be happy, but it's hard when men lose the weight a lot faster than you. Yuck.

Well, I just have to stay motivated and not let the sugar attack me anymore.

Confession: I had a Reese's cup last night after making a trip to the gas station.

Cheer: I had all of my 64 ounces of water and I had Subway for lunch!

  1. Dieting with a male partner is so unfair - not only do they lose faster and lose more, but they get to eat more! Whose idea was that?
