The problem is that the government actually *subsidizes* unhealthy food, generally in the form of corn and soy (which get processed into unhealthy snacks), meat, and dairy products.<br /><br />You can get healthy food more cheaply than unhealthy food, but you have to be willing to cook it, and that can be a real problem time-wise when you have children and a high-stress job like teaching.<br /><br />I think you should consider dry lentils with some sort of grain, such as rice, couscous, or pasta. You don't have to soak the lentils like dry beans, and they're not as expensive as canned beans—just boil them for 20-25 minutes. The grain can be cooked separately so that it's ready at the same time. The actual time spent in the kitchen should be only 5-10 minutes. And you can introduce variety by adding various herbs on different days (not spices, because you'd have to cook those separately; herbs can be eaten raw).
